3-Ingredient  Chocolate Bark

1 1/2 tsp course sea salt

1/4 cup Lili’s Selection pistachios

12 oz semi-sweet chips

1 stick butter, chopped into pieces

¾ of a cup brown sugar

2 eggs

2-3 ripe bananas, mashed (about 1 cup)

4 tablespoons of Greek yoghurt

1 cup all-purpose gluten free flour (or ordinary plain white flour if you prefer)

½ a cup of almond meal (or grounded almonds)

a large pinch of salt

1 teaspoon baking powder

½ a cup of pistachio nuts, plus another handful for decorating

  • For the Glaze

  • 1/2 cup confectioners’ sugar
  • 1 tablespoon unsalted butter
  • 2 tablespoons honey
  • 1 tablespoon heavy cream
  • 1/4 cup crushed pistachios

Energy Bites

  • 1/4 cacao powder
  • 2/3 cup almond
  • 1/4 cacao powder
  • 2/3 Lili’s Selection pistachios
  • 1/3 cup coconut
  • 1 cup (10 whole) pitted Medjool dates

Mini Chocolate Layered Cake With Pistachio Buttercream

For Chocolate Cake

1/2 cup (60gr) all-purpose flour

1/4 cup (30gr) natural unsweetened cocoa powder

2 tablespoons Lili’s Selection pistachio oil

1 teaspoon baking powder

¼ teaspoon salt

½ cup (115gr) unsalted butter, cut into small pieces

8oz (225gr) semi-sweet chocolate, broken into small pieces

4 eggs, at room temperature

2/3 cup (130gr) granulated sugar

2 teaspoons pure vanilla extract

For Pistachio Buttercream

1/2 cup (115gr) unsalted butter, softened

¼ cup (60gr) Lili’s Selection pistachio paste

2 cups (250gr) powdered sugar

2 tablespoons heavy cream

1 teaspoon pure vanilla extract

2 tablespoons (15gr) Lili’s Selection shelled pistachios for decoration, roughly chopped
